Nudging is just one technique that we can deploy in our menu design to encourage people to make sustainable food choices. Nudging aims to change people’s behaviour in a predictable way without forbidding any options. It involves modifying the context in which a decision is made, in order to make a certain course of action more appealing.
Research shows that where a menu consists of over 75% vegetarian options, a meat-eater will be more likely to choose a vegetarian option. We’ve also found that listing sustainable dishes at the top of menu layouts is another clever tactic.
